🇭🇺 Hungarian Mushroom Soup

🛒 Ingredients

  • 500 g mushrooms (sliced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tsp Hungarian paprika
  • 1 tsp dried dill (or 1 tbsp fresh dill)
  • 1 tbsp soy sauce
  • 2 tbsp flour
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 tbsp lemon juice
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

1. Sauté the base

  • Melt butter with olive oil in a pot.
  • Add onions and cook until soft and translucent.
  • Stir in garlic and cook for about 30 seconds.

2. Cook the mushrooms

  • Add sliced mushrooms and cook until they release their juices and start to brown.

3. Build the flavor

  • Stir in paprika, dill, and soy sauce.
  • Sprinkle in flour and mix well to coat everything.

4. Add liquids

  • Slowly pour in broth while stirring to avoid lumps.
  • Add milk and bring to a gentle simmer.

5. Simmer

  • Cook for about 10–15 minutes until slightly thickened.

6. Finish creamy

  • Lower heat and stir in sour cream and lemon juice.
  • Season with salt and pepper to taste.
