Authentic Hungarian Chicken Paprikash (Paprikás Csirke)

Ingredients

  • 1 whole chicken, cut into pieces (or 1.5 kg chicken thighs/drumsticks)
  • 2 tbsp lard or oil
  • 2 large onions, finely chopped
  • 3 tbsp sweet Hungarian paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup sour cream
  • 1 tbsp flour

Instructions

  1. Heat lard or oil in a large pot over medium heat.
  2. Add onions and cook slowly until golden and soft.
  3. Remove the pot briefly from heat and stir in the Hungarian paprika so it does not burn.
  4. Add garlic, tomato, and green pepper. Cook for 5 minutes.
  5. Add chicken pieces and coat well in the paprika mixture.
  6. Pour in chicken broth, season with salt and pepper, then cover and simmer for 40–45 minutes until the chicken is tender.
  7. In a bowl, mix sour cream with flour until smooth.
  8. Add a few spoonfuls of the hot sauce into the sour cream mixture to temper it.
  9. Stir the sour cream mixture back into the pot.
  10. Simmer gently for 5 minutes until the sauce becomes creamy.
