🇭🇺 Karfiolleves (Hungarian Cauliflower & Dumplings Soup)

🧾 Ingredients:

  • 1 medium cauliflower (cut into florets)
  • 1 carrot (sliced)
  • 1 small onion (chopped)
  • 2 tbsp oil or butter
  • 1 tsp paprika
  • 1.2 L vegetable or chicken broth
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp dried parsley (or fresh)

For the dumplings:

  • 1 egg
  • 3–4 tbsp flour
  • 1 pinch of salt

👩‍🍳 Instructions:

  1. In a pot, heat oil and sauté the chopped onion until soft.
  2. Add paprika, stir quickly, then pour in the broth.
  3. Add cauliflower florets and sliced carrot. Season with salt and pepper.
  4. Simmer for about 15–20 minutes until the vegetables are tender.
  5. For the dumplings, mix egg, flour, and salt into a soft batter.
  6. Drop small spoonfuls of the batter into the simmering soup.
  7. Cook for another 5–7 minutes until the dumplings are set.
  8. Sprinkle with parsley and serve hot.
