
Instructions:
1. Prep and Sear the Chicken:
- Pat the chicken dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken on both sides until golden brown and cooked through (about 5β6 minutes per side). Remove and set aside.
2. SautΓ© Mushrooms and Garlic:
- In the same pan, add butter.
- Add sliced mushrooms and sautΓ© for 5β6 minutes until browned.
- Stir in the minced garlic and cook for 1 more minute until fragrant.
3. Deglaze & Simmer:
- Pour in the chicken broth to deglaze the pan, scraping up any flavorful bits.
- Stir in the light cream and bring to a gentle simmer.
4. Add Spinach & Return Chicken:
- Add fresh spinach and stir until wilted (1β2 minutes).
- Return the cooked chicken breasts to the pan, spooning sauce and mushrooms over the top.
- Simmer for 2β3 more minutes to reheat and blend flavors.
To Serve:
Serve over rice, mashed potatoes, or pasta β and drizzle with that garlicky mushroom cream sauce!
Optional: Top with fresh parsley or grated Parmesan.
