Hungarian Sour Cherry Cake

🧾 Ingredients

For the batter:

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 3/4 cup (150 g) sugar
  • 1/2 cup (120 ml) vegetable oil or melted butter
  • 1/2 cup (120 ml) milk
  • 1 tsp vanilla extract

For the filling:

  • 2 cups (300 g) sour cherries (fresh or jarred, pitted)
  • 2 tbsp sugar (adjust depending on tartness)
  • 1 tbsp flour or breadcrumbs (to absorb juice)

For topping (optional):

  • Powdered sugar
  • Lemon zest or cinnamon

👨‍🍳 Instructions

1. Prepare the cherries

  • If using jarred cherries, drain them well.
  • Toss cherries with sugar and a little flour or breadcrumbs.
  • Set aside.

2. Make the batter

  • Preheat oven to 180°C (350°F).
  • In a bowl, mix flour, baking powder, and salt.
  • In another bowl, beat eggs and sugar until light.
  • Add oil (or butter), milk, and vanilla.
  • Gradually mix in the dry ingredients until smooth.

3. Assemble

  • Grease a baking pan (about 9×13 inch / 20×30 cm).
  • Pour batter into the pan.
  • Spread cherries evenly on top (they will slightly sink).

4. Bake

  • Bake for 30–40 minutes until golden and a toothpick comes out clean.
  • Let cool.

🍽️ Serving

  • Dust with powdered sugar before serving
  • Cut into squares and enjoy warm or at room temperature 😋
