
Ingredients
- 2 cups (250 g) all-purpose flour
- 2 eggs
- 2 cups (500 ml) milk
- 1 cup (250 ml) sparkling water (or regular water)
- 1 tbsp sugar
- 1 pinch salt
- 2 tbsp oil (plus more for cooking)
- 1 tsp vanilla extract (optional, for sweet version)
Instructions
- In a bowl, whisk eggs, milk, sugar, salt, and vanilla.
- Add flour gradually and mix until smooth (no lumps).
- Stir in sparkling water and oil. Let the batter rest 20–30 minutes.
- Heat a lightly oiled pan over medium heat.
- Pour a thin layer of batter and swirl to cover the pan.
- Cook 1–2 minutes until golden, then flip and cook the other side.
- Repeat with remaining batter.
