Hungarian Pancakes (Palacsinta)

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 eggs
  • 2 cups (500 ml) milk
  • 1 cup (250 ml) sparkling water (or regular water)
  • 1 tbsp sugar
  • 1 pinch salt
  • 2 tbsp oil (plus more for cooking)
  • 1 tsp vanilla extract (optional, for sweet version)

Instructions

  1. In a bowl, whisk eggs, milk, sugar, salt, and vanilla.
  2. Add flour gradually and mix until smooth (no lumps).
  3. Stir in sparkling water and oil. Let the batter rest 20–30 minutes.
  4. Heat a lightly oiled pan over medium heat.
  5. Pour a thin layer of batter and swirl to cover the pan.
  6. Cook 1–2 minutes until golden, then flip and cook the other side.
  7. Repeat with remaining batter.

Filling Ideas (Traditional)

  • Apricot jam
  • Cocoa powder + sugar
  • Sweetened cottage cheese (túró)
  • Nutella or chocolate cream
  • Ground walnuts + sugar
