
Instructions:
If using pre-ferment, mix flour, water, and yeast the night before and leave it covered at room temperature or in the fridge overnight.
In the morning, dissolve the yeast and sugar in lukewarm liquid. Add the pre-ferment (if used), flour, salt, and oil. Knead well until you get a smooth, elastic dough.
Cover and let it rise until doubled in size. Punch it down, then let it rise a second time for better texture and flavor.
Shape the dough into a large loaf and place it in a greased glass baking dish (or Jénai dish). Let it rise again until puffy.
Bake in a preheated oven at 200°C (390°F) for about 35–45 minutes, until the crust is golden and crispy and the inside is fully baked.
