Hungarian Chicken Paprikash (Paprikás Csirke)

Ingredients:

  • 1 kg (2 lb) chicken pieces (thighs/drumsticks preferred)
  • 1 large onion, finely chopped
  • 2 tbsp vegetable oil or lard
  • 2 tbsp sweet Hungarian paprika
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green bell pepper, chopped
  • 200 ml (¾ cup) sour cream
  • 1 tbsp flour (optional, for thickening)
  • Salt and pepper to taste
  • Water or chicken broth as needed

Instructions:

  1. Heat oil in a pot and sauté onion until soft.
  2. Remove from heat, stir in paprika.
  3. Add chicken pieces, season with salt and pepper, and return to heat.
  4. Add tomato and bell pepper, pour in a little water or broth.
  5. Cover and simmer 35–45 minutes until chicken is tender.
  6. Mix sour cream with flour, stir into the sauce, and simmer a few minutes until thickened.
  7. Serve hot with nokedli (Hungarian dumplings), rice, or pasta.
