
Ingredients
Soup
- 1 whole chicken or 500 g chicken pieces
- 2 carrots (sliced)
- 1 parsley root (or parsnip, sliced)
- 1 onion (whole or halved)
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper
- 1.5–2 L water
- fresh parsley
Semolina Dumplings
- 1 egg
- 3–4 tbsp semolina
- pinch of salt

Instructions
- Place chicken in a pot, add water, salt, pepper, onion, garlic, and vegetables.
- Bring to a boil, then simmer 60–90 minutes until chicken is tender.
- Skim foam from the top while cooking.
Dumplings
4. Mix egg, semolina, and salt. Let rest 10–15 minutes.
5. Drop small spoonfuls into the simmering soup.
6. Cook dumplings 5–7 minutes until they float and are soft.
- Remove chicken (optional shred and return to soup).
- Add fresh parsley and serve hot.
