Warm, sweet, and caramelized, Kürtőskalács is one of Hungary’s most iconic street foods. This spiral-shaped pastry is made from soft yeast dough wrapped around a cylinder, baked until golden, then coated in sugar that melts into a crisp, shiny crust. 🥖 Ingredients
For the Dough
- 500 g (4 cups) all-purpose flour
- 7 g (2¼ tsp) active dry yeast
- 250 ml (1 cup) warm milk
- 80 g (⅓ cup) sugar
- 2 eggs
- 80 g (⅓ cup) melted butter
- 1 tsp vanilla extract
- ½ tsp salt
For Coating
- 200 g (1 cup) granulated sugar
- 60 g (¼ cup) melted butter

Step 1: Activate the yeast
Mix warm milk, 1 tablespoon sugar, and yeast. Let sit for 5–10 minutes until foamy.
Step 2: Make the dough
In a bowl, combine flour, remaining sugar, and salt.
Add:
- Yeast mixture
- Eggs
- Melted butter
- Vanilla
Mix and knead for 8–10 minutes until smooth and elastic.
Cover and let rise for 1–1.5 hours, until doubled.
Step 3: Shape the dough
Punch down dough and divide into 4–6 pieces.
Roll each into a long rope (about finger thickness).
Step 4: Wrap the chimney cakes
Wrap dough spirally around a greased rolling pin, metal tube, or foil-covered bottle-shaped mold.
Gently press seams together.
Step 5: Coat with butter & sugar
Brush generously with melted butter.
Roll in granulated sugar until fully coated.
Step 6: Bake
