Hungarian Goulash Soup (Gulyásleves) – Homemade

Ingredients

  • 500–700 g beef (chuck or stewing beef), cut into cubes
  • 2 tbsp oil or lard
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp sweet Hungarian paprika
  • 1 tsp caraway seeds
  • 1–2 bell peppers, chopped
  • 1 tomato, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1–1.5 liters beef broth or water
  • 1 tsp salt (to taste)
  • ½ tsp black pepper

Instructions

  1. Heat oil in a large pot and sauté the onion until soft and golden.
  2. Remove from heat and stir in paprika (don’t burn it).
  3. Add beef, garlic, caraway seeds, bell pepper, and tomato. Mix well.
  4. Pour in broth or water and bring to a gentle boil.
  5. Cover and simmer for about 60–90 minutes until the beef is tender.
  6. Add carrots and potatoes.
  7. Continue cooking for 20–25 minutes until vegetables are soft.
  8. Adjust salt and pepper to taste.

Serve hot with fresh bread 🇭🇺🍲
