Hungarian Layered Potato Casserole (Rakott Burgonya)

🧾 Ingredients:

  • 1 kg potatoes
  • 4–5 eggs
  • 200 g smoked sausage (Hungarian kolbász or any smoked sausage)
  • 200 ml sour cream
  • 1 small onion (optional)
  • Salt and black pepper to taste
  • 1 tsp paprika
  • Butter or oil for greasing

👩‍🍳 Instructions:

  1. Boil the potatoes in their skins until tender, then peel and slice.
  2. Boil the eggs, peel, and slice.
  3. Slice the sausage into thin rounds.
  4. Preheat oven to 180°C (350°F) and grease a baking dish.
  5. Layer half of the potatoes, season with salt, pepper, and paprika.
  6. Add a layer of eggs and sausage.
  7. Spread some sour cream over the layer.
  8. Repeat the layers and finish with sour cream on top.
  9. Bake for 30–40 minutes until golden on top.
