Hungarian Plum Cake (Szilvás Pite)

Ingredients

Dough

  • 300 g all-purpose flour
  • 150 g butter, cold and cubed
  • 100 g sugar
  • 1 egg
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tsp vanilla extract

Filling

  • 600–800 g fresh plums, halved and pitted
  • 2–3 tbsp sugar (to taste)
  • 1 tsp cinnamon
  • 1–2 tbsp semolina or breadcrumbs (to absorb juice)

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking pan.
  2. In a bowl, mix flour, baking powder, sugar, and salt.
  3. Add butter and rub into crumbs.
  4. Mix in egg and vanilla until a soft dough forms.
  5. Divide dough in two parts (base and top).
  6. Press the first half into the baking pan.
  7. Sprinkle semolina or breadcrumbs over the base.
  8. Arrange plum halves on top, cut side up.
  9. Sprinkle sugar and cinnamon over plums.
  10. Cover with remaining dough (crumbled or rolled).
  11. Bake for 35–45 minutes until golden.
