Hungarian Sausages (Házi Kolbász) 🇭🇺

Ingredients

  • 3 lbs (1.5 kg) pork shoulder
  • ½ lb (250 g) pork fat
  • 1 tbsp salt
  • 2–3 tbsp sweet Hungarian paprika
  • 1 tsp hot paprika (optional)
  • 4 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp caraway seeds
  • ½ cup cold water
  • Sausage casings, cleaned

Instructions

  1. Cut pork and fat into chunks and grind.
  2. Mix with salt, paprika, garlic, pepper, caraway, and cold water.
  3. Knead well until sticky and evenly seasoned.
  4. Stuff mixture into casings and twist into links.
  5. Refrigerate overnight for best flavor.
  6. Grill, bake, or pan-fry until fully cooked and browned.
