Lecsó (Hungarian Pepper Stew)

📝 Ingredients

  • 2 tbsp oil or lard
  • 2 large onions (sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp Hungarian sweet paprika
  • 4–5 bell peppers (sliced)
  • 3–4 tomatoes (chopped) or 400 g canned tomatoes
  • 150 g smoked sausage (optional)
  • Salt and pepper to taste
  • 1 tsp sugar (optional, to balance acidity)

👩‍🍳 Instructions

1. Cook the Base

  1. Heat oil or lard in a large pan.
  2. Add onions and cook until soft and slightly golden.
  3. Stir in garlic and cook briefly.
  4. Remove from heat and add paprika.

2. Add Vegetables

  1. Add sliced peppers and tomatoes.
  2. Return to heat and mix well.

3. Add Sausage (Optional)

  • Stir in sliced smoked sausage for extra flavor.

4. Simmer

  • Cook on medium-low heat for 25–30 minutes, stirring occasionally, until vegetables are soft and stew-like.

5. Season & Serve

  1. Season with salt, pepper, and a little sugar if needed.
  2. Serve hot with fresh bread.
