Pork with Potatoes

Ingredients (serves 4):

  • 500 g (1 lb) pork (shoulder or loin), cut into cubes
  • 4–5 potatoes, peeled and diced
  • 2 tbsp oil or lard
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 bell pepper, chopped (optional)
  • 1 tomato, chopped or 1 tbsp tomato paste
  • 1–2 cups water or broth
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions:

  1. Heat oil in a pot and sauté onion until soft. Add garlic and cook 1 minute.
  2. Remove from heat briefly, stir in paprika.
  3. Add pork and brown lightly.
  4. Add bell pepper, tomato, and a little water or broth. Simmer 30–40 minutes until meat starts to soften.
  5. Add potatoes and more liquid if needed. Continue cooking 20–25 minutes until potatoes are tender.
  6. Season with salt and pepper.
  7. Garnish with parsley and serve hot.
