Seafood Bisque with Crab, Shrimp & Lobster
Ingredients
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp flour
- 3 cups seafood stock (or chicken stock)
- 1 cup heavy cream
- Β½ cup white wine (optional)
- Β½ cup tomato paste
- 1 tsp Old Bay seasoning
- Salt and pepper to taste
- Β½ lb cooked shrimp, chopped
- Β½ lb cooked crab meat
- Β½ lb cooked lobster meat, chopped
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions
- Melt butter in a pot. Add onion and cook until soft.
- Stir in garlic and cook 1 minute.
- Add flour and whisk to form a roux.
- Slowly pour in seafood stock while whisking.
- Add tomato paste, wine (if using), Old Bay, salt, and pepper.
- Simmer 10 minutes.
- Stir in heavy cream and simmer 5 minutes.
- Add shrimp, crab, and lobster. Cook on low for 5 minutes.
- Add lemon juice and stir.
- Serve hot with parsley on top.
