Ingredients

  • 300 g all-purpose flour
  • 200 g butter (soft)
  • 100 g powdered sugar
  • 2 egg yolks
  • 1 tsp vanilla sugar or vanilla extract
  • 1 tbsp lemon zest (optional)
  • apricot jam
  • powdered sugar (for dusting)
  • melted chocolate (optional)

Instructions

  1. Mix butter and powdered sugar until creamy.
  2. Add egg yolks, vanilla, and lemon zest.
  3. Add flour and mix to form a soft dough.
  4. Wrap and refrigerate 30 minutes.
  5. Roll dough to about 3–4 mm thickness.
  6. Cut cookies; cut a small hole in the center of half of them.
  7. Bake at 180°C (350°F) for 10–12 minutes.
  8. Spread apricot jam on the bottom cookies and place the cut cookies on top.
  9. Dust with powdered sugar and drizzle with melted chocolate.
