- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 zucchini, diced (optional)
- 1 cup green beans, chopped
- 1 cup corn or peas (optional)
- 1 can diced tomatoes (400g)
- 6 cups vegetable broth (or water + bouillon)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt & black pepper to taste

π² Instructions
1. SautΓ© the vegetables
Heat oil in a big pot.
Add onion, carrot, and celery.
Cook 5β7 minutes until soft.
2. Add remaining vegetables
Add potatoes, zucchini, green beans, corn, peas, etc.
3. Add liquid and tomatoes
Pour in broth + canned tomatoes.
Add oregano, thyme, paprika, salt, pepper.
Stir well.
4. Simmer
Bring to a boil, then lower heat.
Simmer 25β30 minutes until veggies are tender.
5. Boost it (optional)
Add beans, pasta, or spinach.
Cook 8β10 minutes more.
Taste and adjust seasoning.
