
👨🍳 Instructions
Prepare the Bőrpörkölt:
- Heat the lard or oil in a large pot and sauté the onions until golden.
- Remove the pot from the heat and stir in the paprika.
- Add the garlic, tomato, and bell pepper, then mix well.
- Add the pork skin pieces and season with salt and pepper.
- Pour in the water or broth and bring to a simmer.
- Cover and cook over low heat for 1½–2 hours, stirring occasionally, until the pork skin becomes tender and the sauce thickens.
- Add a little extra water if needed during cooking.
Prepare the Homemade Tarhonya:
- Mix the eggs, flour, and salt into a firm dough.
- Using a coarse grater, grate the dough onto a tray.
- Let the grated dough dry for 20–30 minutes.
- Bring a pot of salted water to a boil and cook the tarhonya for 8–10 minutes, or until tender.
- Drain well.
