🇭🇺 Hungarian Yellow Wax Bean Stew (Zöldbabfőzelék)

🧾 Ingredients:

  • 500 g yellow wax beans (or green beans), trimmed and cut
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp oil or butter
  • 1 tbsp Hungarian sweet paprika
  • 1 tbsp flour
  • 500–700 ml water or vegetable broth
  • 1–2 tbsp fresh dill (or 1 tsp dried)
  • 150 ml sour cream
  • 1 tbsp vinegar or lemon juice
  • 1 tsp sugar (optional)
  • Salt and black pepper (to taste)

👩‍🍳 Instructions:

  1. Cook the beans:
    Place beans in a pot with water or broth and a pinch of salt. Cook for 15–20 minutes until tender.

  1. Make the base:
    In a pan, heat oil or butter and sauté onion until soft. Add garlic briefly.
  2. Remove from heat and stir in paprika, then add flour and mix well.

  1. Combine:
    Slowly add some of the hot cooking liquid to the roux, stirring until smooth.
  2. Pour mixture back into the pot with beans.

  1. Season & finish:
    Add dill, salt, pepper, and a little sugar if desired.
  2. Stir in sour cream and simmer gently for a few minutes (do not boil).
  3. Add vinegar or lemon juice for a slightly tangy flavor.
