Warm, sweet, and caramelized, Kürtőskalács is one of Hungary’s most iconic street foods. This spiral-shaped pastry is made from soft yeast dough wrapped around a cylinder, baked until golden, then coated in sugar that melts into a crisp, shiny crust. It’s crunchy on the outside, soft and fluffy inside, and absolutely irresistible when served fresh.

🥖 Ingredients

  • 80 g (⅓ cup) melted butter
  • 1 tsp vanilla extract
  • ½ tsp salt

For Coating

  • 200 g (1 cup) granulated sugar
  • 60 g (¼ cup) melted butter

Step 1: Activate the yeast

Mix warm milk, 1 tablespoon sugar, and yeast. Let sit for 5–10 minutes until foamy.


Step 2: Make the dough

In a bowl, combine flour, remaining sugar, and salt.

Add:

  • Yeast mixture
  • Eggs
  • Melted butter
  • Vanilla

Mix and knead for 8–10 minutes until smooth and elastic.

Cover and let rise for 1–1.5 hours, until doubled.


Step 3: Shape the dough

Punch down dough and divide into 4–6 pieces.
