🇭🇺 Hungarian Chimney Cakes (Kürtőskalács)

Kürtőskalács, known in English as Hungarian Chimney Cakes, are one of the most iconic pastries of Hungary. These sweet yeast dough cakes are wrapped around a cylinder, baked until golden, and coated in sugar that caramelizes into a crisp, shiny crust. Traditionally sold at fairs, Christmas markets, and street festivals, they are best enjoyed warm, fresh from the oven.

For the Dough

  • 500 g (4 cups) all-purpose flour
  • 7 g (2¼ tsp) active dry yeast
  • 250 ml (1 cup) warm milk
  • 80 g (â…“ cup) granulated sugar
  • 2 large eggs
  • 80 g (â…“ cup) melted butter
  • 1 tsp vanilla extract
  • ½ tsp salt

For Brushing

  • 60 g (¼ cup) melted butter

For Coating

  • 200 g (1 cup) granulated sugar

  • Finely chopped walnuts
  • Ground hazelnuts
  • Cocoa powder
