Hungarian Goulash (Spend With Pennies Style)

Ingredients

  • 2 tbsp olive oil
  • 1½ lbs (700 g) beef stew meat (cubed)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp Hungarian paprika
  • 1 tsp caraway seeds (optional)
  • 1 bell pepper (chopped)
  • 1 tomato (chopped) or 2 tbsp tomato paste
  • 2 carrots (sliced)
  • 2 potatoes (cubed)
  • 4 cups (1 L) beef broth
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Heat oil in a large pot and brown the beef.
  2. Add onion and cook until soft.
  3. Stir in garlic and paprika (remove from heat briefly to avoid burning).
  4. Add bell pepper, tomato, carrots, potatoes, and caraway seeds.
  5. Pour in beef broth, season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer 60–90 minutes until beef is tender.
  7. Adjust seasoning and serve hot.

Serve as a hearty soup/stew with bread.
